Chicken Bruschetta



The warm, Italian flavors of traditional bruschetta topping come to life with McCormick® Chicken Bruschetta Seasoning Mix. Add this robust blend of sea salt, garlic, basil and oregano to chicken and tomatoes, then bake and serve over pasta. 

  • 1 pkg McCormick Chicken Bruschetta Seasoning Mix - basil, oregano, red pepper, parmesan, tomato, garlic, onion, sea salt, sugar
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar 
  • 2 pounds (about 10) plum tomatoes, quartered - Truly need lots of these!
  • 1 pound chicken tenders - could also use shrimp!
  • 8 ounces pasta, cooked 
  • parmesan



OPTIONAL VEGGIES:

  • zucchini
  • onions
  • garlic
  • bell pepper

Preheat oven to 425°F. 

Mix Seasoning Mix, oil and vinegar in large bowl. Add tomatoes and chicken; toss to coat. 

Place in single layer on large foil-lined baking pan sprayed with no stick cooking spray. 


Bake 30 minutes or until chicken is cooked through. 

Toss tomatoes, chicken and pan juices with pasta in large bowl. 


NOTE: I often do the whole thing stovetop.
